After slow poaching chicken breast, we combine it with a dressing made with Vadouvan Curry – a sweet, madras-style curry made with garlic, onion, and other spices, Duke’s Mayonaiise, and pickling liquid from our pickled red onions. We then toss it with thinly sliced celery and golden raisins pickled in sugar, rice wine vinegar, star anise, and pink peppercorns.
